Food and Gluten Sensitivity

Food sensitivity is defined as an intolerance to some foods or particular components in foods such as gluten. Food intolerances are different from food allergies where the immune system reacts immediately, and their symptoms are usually less severe than food sensitivities though it impacts one’s daily living profoundly.

Food sensitivity is a general term that encompasses gluten intolerance which is a health condition that affects people who get upset stomachs anytime they take foods rich in gluten. Discomforts and signs may range from gas, stomach ache, frequent bowel movements, low energy, and headaches. First of all, it is necessary to distinguish gluten intolerance from celiac disease, which is an autoimmune disease that results from the ingestion of gluten with damage to the small intestine.

Commercially available food intolerances include Lactose intolerance, milk allergy, and several food additives or preservatives among others. Food sensitivities require the restriction of foods that cause discomfort to the person to reduce the manifestation of such symptoms. To determine sensitivities, it is preferable to document one’s meals or conduct an elimination diet.
